Kid Approved Sweet Potato Smoothies // mindfulmomma.com The day I discovered the frozen sweet potato chunks at my local co-op was oddly exciting. Not only was it a new way to keep a healthy staple on hand for soups and stews – but also something fun and different to add to our smoothies! And bonus – sweet potatoes make for a surprisingly pretty smoothie too – a light peachy, orange color. If you’re the type who has a little trouble with the green and puke brown colors that come from making smoothies with wads of spinach or a few too many rainbow-colored ingredients (remember mixing all those paint colors together as a kid and coming up with brown?), you’ll know exactly what I mean!
I got straight to work (so hard!) to come up with 3 smoothie versions using sweet potatoes as a base. They’ve all been kid-approved (yum!), mom-approved (healthy!) and pass the smoothie fashion test – because that’s SO important! FYI – the frozen sweet potatoes I buy are raw and come from Stahlbush Island Farms, but I bet you can find other brands out there too. Or you could freeze your own, which is something I plan on doing at some point.

Sweet Potato Smoothies

I hope you’ll try these simple sweet potato smoothies recipes and let me know which one you like best! The directions for each of them is the same – place all ingredients in a blender and mix until smooth!

Sweet Potato Vanilla Mango

1/2 cup frozen sweet potato 1/2 cup frozen mango 1 cup sweetened vanilla almond milk 1/2 teaspoon vanilla extract

Sweet Potato Orange Banana

1/2 cup frozen sweet potato 1/2 cut frozen banana 1/2 cup sweetened vanilla almond milk 1/2 cup orange juice

Sweet Potato Peach Coconut

1/2 cup frozen sweet potato 1/2 cup frozen peaches 1 cup sweetened coconut milk
