Whew – it finally cooled down long enough for me to roast up my abundance of CSA tomatoes. It never fails to surprise me how a large pile of tomatoes can become so small but all it takes is one bite of that concentrated, caramelized, toasty, slightly sweet flavor and I know where it all went! Last night we enjoyed fresh rolls with goat cheese and roasted tomatoes with our dinner:
