That coconut oil has health benefits is not new news. Even so, I have not embraced it in cooking as much as I would expect. I tend to stick with the more familiar fats – butter, olive oil and canola oil (organic as much as possible!), simply because I know what works for me and what I read most often in recipes.
Lately, I’ve been on a mission to use more coconut oil in cooking and baking. I’ve found that coconut oil is wonderful for roasted veggies, is a no-brainer with curries, and of course coconut + chocolate has got to be one of the most perfect food combos ever!

Really, your cat eats it? How interesting! I remember giving Vaseline to my family cat to stop hair balls. I bet coconut oil is good for that!

Yum! I like to use coconut oil in all kinds of recipes. I use it in place of other oils for baking and cooking. If it’s medium high heat I use refined.
